When I choose DNS speed is my number one priority, second thing is DNS propagation, my ISP is very slow with that and thats biggest con.Using other DNS providers than your ISP does help provide additional anonymity. Just think - every time you load a website, there may be a DNS resolution. Example: You load r4p3.net (which your ISP translates to the 104...... blah blah) for our CF cloud proxy.
Google may (or may not) offer better protection than your ISP. I know it is recommended to use your own/custom DNS if you are trying to REALLY be anonymous.

Also, from a tracking perspective sometimes you may have DNS leaking by using your ISP. There are many DNS solutions, it can be a hard decision to make. It really depends what you want.

You may also configure your DNS settings on your WiFi router, this makes sure all your devices connected use that (1.1.1.1). And likewise, if you decide to take that off your router, it will default back to your ISP's DNS.
